Chop the bacon and chorizo into small pieces
Slice the garlic and chives.
In an earthenware bowl suitable for the fire, we sauté the bacon cubes (without oil). When they begin to brown, we also add the chorizo pieces and sauté them for a couple of minutes.
Add the garlic and sauté them in the meat juice. When they start to brown, we also add the chives until tender.
While the vegetables continue to cook, beat the three eggs, season them with a little thyme and ground black pepper (to taste). Lower the heat and add the eggs, stirring constantly until the desired consistency is achieved.
When the egg is set, remove the bowl from the heat.
Accompany with a loaf of bread and cold craft beer.
